Mock Ginger Take the largest [Canly? flowers] you can get cut off all the flower from the stalks peel them and throw them into strong salt and water for three days then drain them in a sieve pretty dry and put them in a jar, boil white wine vinegar with Cloves mace and allspice each half an ounce forty blades of garlick a stick of horseraddish 1/4 oz of [Cayanne?] [1/4?] yellow turmerick and 2 oz [borage?] pour it boiling over the stalks and cover Close.
