To seethe fresh salmon Sett on a kittle a fair water and boil it in a bundle of rosemary and time season it very well with salt left it boil till ht liquor tastes of the herbs then put in your salmon and let it boyl until it is so tender that your finger will enter easily into it so when it is more than half boiled pour in round about it a good quantity of wine vinegar put your liquor into an earthen pan and when it and the salmon is cold put it in and [ sowfs it ] To make Jumballs Take half a pound of flower finely seared and half a pound of loaf sugar finely searsed 4 yolks of eggs and one white as much butter as a walnut washt in rosewater one poonful of creame a quarter of an ounce of caraway seed mix the flower and half the sugar and the sees together then put in the eggs being beaten and the butter and creame & make it up in a paste then knead in the'other halfe of the sugar when it is so done make it into knots. Rowl them in fine sugar when you make them pup when they are cold lay them uppon pye plates coverd thick with flower. prick them and sett them into your oven as hot as for biskett. Malligo reasons 3 pints of water stone and shred of reasons put them into an earthen vessell. Let them stand 10 days in steep close covered when it may not be damp at 10 days strain it through a cotton strainer boil it very quick and sett in it 2 or 3 times then put it into an earthen vessell. When it is cold bottle it up close add to it syrup of Rasberries and Lemon Peele. Reasons of the sunne in bottle ale fortnight before it is to be drank. A way to distill roses in the Winter Take your roses, pick them, then strew the leaves an inch or two thick in a great earthen vessell on the leafe throw bay salt as much as will thinly cover them then a lay of rofes as before and then bay salt as before and in this oder until the pott be full, when full let it be close covered with some fitt coverings and gluted together with some very good morter and then sett afoote underground and let it stand till christmas or after then take out the rose leaves and distill them in a limbic.
