Too Pickle Mushrooms take ye beast [least?] you can get and pat ym. into milk and water or ilain water then get some milk and water or water alone on the fire to boyle in something that is not brass-when it boyles put them in and bet them boyle but a little least they turn black when they are cold make make a pickle of white wine and one part or two of white wine vinegar-boyle it with sliced nutmeg cloves and [mace?]- whole peper a few Bay LEaves and when they are boyled put them together in little glasses and pour upon them melted sewit tye them up- close or else they will not keep so well. To Make an Oringe Pudding Cover the dish with a sheet of puff paste - cute 2 oun[c] of preserved oringe and scittorn peell in thin slices all of an Equall length and stick them in y. paste-then beat 10 Eggs leaveing out all ye. weites pat to y. Eggs halfe a pound of double Refind Sugar beat fine 2 Spoonful of Oringe flower water 3 quarters of a pound of melted butter. beat it well together and pour it in ye. dish upon ye. oringe and Scittorn as it sticks and sift double refind sugar upon it as you put it into ye. oven, halfe an hour will bake it.
