Stephen McDannald To Make [Mallagoc?] Jack Boyle 150 pounds of honey in 40 gallons of spring water with 2 pounds of walnut leaves, Scum it very well whilst boyling, which must be half an hour, then run it through a [haire live?] and when tis cold and stilled [stir?] it up, let the [vessel?] be near full, close it well and when it has stood twelve months bottle it off The [vessel?] must be hooped with iron and it must be done round the bong hole with [rosin?], be sure the honey be of the best sort, the walnut leaves must be pickt from the stalks and [not it crossed out] no spots on them
