To preserue Quinces white; Take of the best sort of quinces the free'st from spotts core & par boyle them tender, but not to break & lett them stand till they are cold, & then pare them in the meane while make ye sirrup wth ye best sort of lump suger, takeing to euery pound of quince apound of suger & a pint of water or something more of each, clarifie the sirrup with whites of Eggs, when it is clarrifie'd & cleane skime'd yf any dreggs remaine in the bottom strain it, then put in the quinces & lett them stand & soak a quarter of an houre, then uppon quick-fire boyle, them apace for half an houre more, alwayes turning & skiming them, & in the boyling them strew them with double refind suger very finely beaten as they turn up & crack Another way to preserue them white, After they are prepare'd as before, when they are boyled half an houre in the sirrup, take them upp & lay them all night in an Earthen pott with ye sirrup, the next day the sirrup wilbe weater, then boyle it upp againe by it selfe till it be thick, then pott 7e quinces, & powre the sirup uppon them, & they will keep all the yeare the sirrup thick & quinces very white, put in amber greece when they are almost readie to come of the fire,
