To Make Allmond Cakes, Take half a pound of Almonds & lay them all night in cold water, & in the morning blanch them into cold water then dry them very well in a cloth; then beat them very fine with a little rose water having had a little musk laid in it afore, then take half a pound of fine sugar & beat it very well & the whites of 4 eggs beaten in a silver basin with birch twigs (tyed together) to a high frosh, then take two ounces of very fine flower & put it to your whites of Eggs & beat them with a spoone, then put therto your sugar & mingle it well, & beat them together, then stir in your Almonds, & lett your plates be very little.~~ buttered & readie, afore, you put in your Almonds & your oven also & as you are readie to sett them into your oven scarse a little sugar uppon them through a tiffeng & lett your oven be so hott as that you may abide, your hand in it, & when they are drawne, take the Cakes & lay them uppon a dry board, itherwise they will stick to the board; Risley Lodge Rive Lake 20 Nov.br 1789- Nine Ounces of Flower Dry It Well, Nine Ounces of Ground Rice Sifted Well through a Fine Sieve< Twenty Ounces of Sugar Beat Fine And Sifted, Twelve Eggs And Half the Whites of the Eggs, Whisk the Eggs And Sugar Well Together One Hour- then Put in the Flower And Rice by One Spoonful At- A Time, till you have Beat it All In, then Add the- Peel of a Whole Lemon Grated And Half the Juice, As Soon As this is done Put It In a Square Tin Into the Oven- One Hour and Quarter Will Bake the Cake Well-
