stirring it from time to time - then strain it thro' a Sieve & put it thro' filtering paper into Pint Bottles, w'ch ought to be well corked & waxed and kep't in the Cellar the longer the better - You may put the refuse back into the Jar - add to it a fresh quantity of vinegar Let it stand for some Weeks, clear it off & it will make good pickle for sauce - ____________________ a sauce for Fish (Mrs.Clavering) 1 Pint of Port WIne 1/4 Pint of Vinegar 3 onions & 3 Bay Leaves 1 Large Root of Horse Reddish scraped. a Very little parsley, Pot marjoram & whole [[pippin?]] Boil these on a slow fire 'till the anchovies [[not mentioned in ingredients]] are quire disolved, then strain it thro' a Hair Sieve, rubbing the ingredients, when quite cold bottle it off for use, & when wanted shake up the bottle, & mix a Table spoonfull or 2 in the Butter Boat. ______________ [[Poiverade?]] Sauce Sr G. Warren's Cooke Mince 12 large [[strikethrough or underline?]] anchovies[[/strikethrough or underline]] shallots [[fine?]], add to them a tea Cup full of clear strong Gravy Boil them together 3 minutes, then add twice as much vinegar & a small quantity of pepper & salt
