A pound Cake (200) One pound of fine flour - 1 do of butter, one pound of loaf Sugar pounded and Sifted, ten eggs, half the whites well beat and Strained thro' a sieve, a wine glass of rose water and a litter mace and nutmeg pounded fine, a few Carroway seeds thrown in first work your butter your hand to cream then put in four eggs, then your Sugar and flour which you must beat up all together well, then put in your rose water, Spice and Seeds, you must beat it up an hour or near that time - Raspberry Flummery (201) To two ounces of Isinglass put three pints of water boil it over a slow fire till the Isinglass is dissolved, then Strain it thro' muslin take the quantity of a Sugar basin of raspberry jam, put to it the juice of one lemon and some of china orange to your taste mix it well together while the isinglass is hot then strain it again thro muslin and put it into your moulds a spoonfull or two of Sherry is an improvement
