rather thick slices, also some fresh lard cut into slices the length of the Turkey & the thickness of your finger - spread this with the tongue & pistachio nuts upon the forcemeat - you may add either Truffles, or mushrooms - roll it up as tight as you can, bind it with Tape - tie it in a cloth & boil it 2 Hours - When boiled lay it upon a board & place a weight upon it *(Serve [illegible] this like a coroners Inquest.) - Let it remain all night - take off the Tape & the Cloth & glaze it with a good brown glaze - It is then ready for the Table - A Chicken may be done in the same manner - poor thing
