Bread without yeast Mrs. Paley Aug 1846 - 7 lb of flour 1 oz of carbonate of soda, 3/4 oz of tartaric acid 1/4 oz of salt 2 quarts of cold water. Pour the water into two seperate vessels a quart in each. Mix the soda in one, the acid in the other. Mix the flour with the soda water first, and then with the acid mix and knead very well as for common bread and immediately put it into a brisk oven. 2 hours & a half are required to bake bread - Buxton Pudding Miss Lowe Oct 1847 - One pint milk two spoonsful of flour mix it smooth & boil it till it is thick, when almost cold stir in 3 ounces of butter 3 ounces of sugar the yolks of 6 eggs & the peel of a lemon grated & three quarters of an hour will bake it - Souffle' Pudding 3 oz of butter 3 of sugar 6 eggs lemon rind & juice Mix well together using the yolks only just as you would for lemon cheese cakes - Put the mixture in a pan & just let it boil & then set it to stand until cold - Beat the whites of the eggs extremely well & add them to the other ingredients all cold. Prepare your pie dish with a very thin crust & line the dish, & put the mixture in with a spoon - Bake it in a hot oven 20 minutes but only bake it when wanted as it must not stand -
