From "Nurses Cook Book" 1c = 1/2 pt = 8 ozs = 16 tbsps = 48 tsps. The quantities given are sufficient for 1 person Kouymiss Milk 1 qt Yeast - 1/5 cake Sugar 1 1/2 Tbsps Have bottles ready & corks that have been thoroughly cleansed & bottled. If convenient use bottles having patent stoppers. Pasteurize the milk, then reduce temp to 80 [degree mark] F. Dissolve the yeast cake in 1/4 c. lukewarm water. Add to the milk '/c the sugar. Pour into the bottles, filling them to with two inches of the top. Cork tightly & tie the cords down '/c strong twine. Shake well. Let stand in warm place 6 hours, then put on ice for 24 hrs. Peptonized Milk Milk 1 pt. Boiled water 1 gill Peptonizing powder, 1 (pancreatin, 5 grs., sod. bicarb 15 grs.) Mix the powder and water; put in clean glass, jar or bottle '/c cover; add the milk. Adjust cover. Shake well Set in water bath of 115 [degree mark] F for 10 minutes. Put on ice immediately. Flaxseed Tea Flaxseed tbsps 2 Boiling water, 2 C. Lemon juice 2 tbsps Sugar to taste Wash the flaxseed. Add to the boiling water. Simmer 1 hour. Strain - Add lemon juice & sugar. Serve hot or cold.
