Elder Wine Take 5 gallons of water 20 of Malaga raisins pick & wipe them clean chop them small & put them into a tub let it stand forthnight stir it well together twice a day, then insuse eldr berries in a jug in the oven then take 5 quarts of the juce & with 5 pound of shugar make it into a sirrup strain the raisins through a sive hard with your hand, and then put it into a vessel & when it is done working stop it up close. Steep the raisin stalks in water the [thesion?] measurd 4 or 5 days. Then strain them out from the water and it to the other quantity. A Potatoe Pudding Take a pound of potatoes boil them and peal them then beat them in a morter take 6 egg yolks and whits strann them and put them to the rest in a morter one nutmeg and sugar to your tast mix and beat them well together then put it into a dish about half an hour will bake it The potatoes must be cold before you beat them or they will lump PS You may and a little melted butter if you please
