6 Orange Wine - Mrs. Smith Take 20 Gallons of Water and 20 pound of sugar boil it and clear it with whites of Eggs against this is done have two hundred Oranges pair'd so thin that no white appears, As soon as the water is taken off the fire put in the Peels and cover them close then squeeze all the juice out of the oranges and when the syrup is almost Cold put in all the juice, but no seeds, add some yeast according to direction and let it work 2 days, then Barrel it up, and add to it 2 Gallon of white wine, stop it close for six weeks, then Bottle it off, adding to each Gallon one ounce of Syrup of Citron, and a Lump of sugar in each Bottle or leave out the Citron, and put in each Bottle an ounce of double refined sugar-- --Orange Wine-- Mrs. Bateman Take six Gallons of Water; 15 pounds of the best powder sugar, 2 whites of Eggs well beaten put them into the cold water and sugar then let it boil 3 quarters of an hour, scum it well, and take it off the fire, and when it is cold put to it 6 spoonfulls of yeast and six ounces of syrup of lemon very well beaten together with 50 good Oranges, and the thin yellow rind of half of them; let all these work together 2 days and two nights then Tun it up, and let it stand a fortnight or more if the weather be cold. then Bottle it. you may add to the Ingredients a Bottle of Renish, if you please
