To make Ginger Wine To seven gallons of Water; put ten pounds of sugar, and let it boil a quarter of an hour, then put to it half a pound of the best Ginger sliced two pound of Raisins, and the peel of 8 Lemons, and 6 spoon fulls of yeast, let it stand to work 2 days, and [strain?] [Tun?] it up you may Bottle it in a fortnight - To Make Goosberry Vinegar - Mrs Bowes - To every Gallon of Water take six Pounds of ripe Berry, bruise them well, in an mortar either Marble or stone will do. if you have neither they must be beat in a wood Bowl with a Trencher, pour the water Cold upon the fruit set the Barrel in a warm Place near the fire or in the Sun. Till the Fruit is all rise to the top. which will be in a fortnights time or a Month at longest - then draw of your Liquor and rench out all the Berrys very clean, to every Gallon of Liquor, put one pound of ordinary sugar, it will work again, when it hath done working close it up very Close, you may then set set it in the Celler six Month when it will be fit to Bottle and very good -
