A Plumb Pudding without Milk Approv'd - Take five spoonsfull of grated Bread, 2 spoonfull of flower, a little Lemon peel shred fine, a quarter of a pd of Suet a quarter of a pd of Currants the same of Raisins, five Eggs leaving out the whites of 2, a quarter of a pd of sugar, two Tablespoonsfull of Bbrandy. mix all together tye it tight in a Cloth and boil it five hours, you must not leave any room in the Cloth to swell, add candy'd orange, Lemon & Almonds, if you like. for 10 people A Good Plumb Cake - Mrs Cuit - 10 oz of Flour dry it well in the Oven, when cold put it through a Tiffany 6 oz of Butter wash it well in cold water, 6 oz of Lump sugar sifted, and wet in with the Butter, 5 Eggs well wet put in by degrees, put in the Flour gradually beat them all well together, 1 lb of currants, when washed and dry'd, 3/4 lb of Raisins, ston'd, 2 oz of candy'd Lemon, 1/4 of oz of bitter Almonds blanched, a Glass of Brandy. The tin it is baked in, to be lined with paper, well butter'd - when Bak'd enough put a knife in it, if it comes clear out the cake is enough. Cream of Tarter Lemon Cheese Cakes - Boil two large lemon peels, pound them well together in a mortar, with a quarter of a pd or more of loaf sugar pd and mix them together, and fill the patty pans about half full.
