Strawberry Wine - Mrs Dawson To 4 quarts of strawberry's, allow 4 quarts of water, ale measure, mash the strawberrys well, & put the water to them, & let it stand some hours, (or till the next morng.) Then strain it thro: a sieve & every gallon of the liquor put 4 pd of lump sugar, or the very best lisbon sugar, you can get when the sugar is dissolved put it in your cask stir it two or 3 times, as soon as the firmentation is stoped close it up it will be fit to Bottle in six weeks, or two months put in a little Isinglass & a little brandy To Pickle Hams Miss [Garder?] Infuse 1 lb of salt, 1 lb of course sugar 2 oz of bay salt 2 oz of salt petre half an ounce of junipers berries in 1 quart of strong Beer for a few minutes & which the liquor remains hot pour it on your hams & let them remain 3 weeks this quanty is sufficient for two tolerable hams or three small ones.
