To preserve Apricots - Miss Hodgson When half ripe choose the finest Apricots pare them as thin as possible push out the stones & weigh them, have ready a lb & 1/2 of finely bruised Loaf sugar to every pound of fruit & strew it over them, let them remain in this state twelve hours, put all together into a preserving pan, let it simmer gently & as the fruit clears take them out singly & pour the syrup over them - Lemon Cream Mrs Walker 6 Table spoonsfuls of sifted sugar,one wine glass of Brandy, one do of white wine, the rinds of two lemons grated & the juice of two - 1 Gill of Calfs foot stock made hot - one pint of cold cream whisk them all together till quite stiff & put it into a mould 1/2 an oz of Isinglass disolved must be added - Red Currant Wine Mrs G--tor Equal quantity of juice & water mixed, the fruit bruised & put through an open towel 3 lbs of sugar to each Gallon of liquor - put it into a tub stir it every day with a stick untill the fermentation, ceases, 1 Gallon of Brandy to 10 or 12 of liquor, the Brandy is added when it is put in the cask, Raspberries improves the colour and flavor -- To boil Rice for Curries - wash it well in salt & water pick it clean, let it boil 10 minnets, then steam it 20, let it be covered with a cloth to keep in steam, then very corn will seperate Beautifully - Ginger cakes 1/2 lb of sifted sugar & Teaspoonfuls of grated Ginger, both put through a Sieve, the white of one Egg beat twenty minuets, then when all mixed together - lay it in little dabs upon Cap paper; they will bake in 5 minutes -
