Kedgeree A Tea-cupful of Rice, well washed & boiled, 4 eggs hard-boiled & cold, any cold white [illegible] fish, Mince the Eggs well with the Rice, put them into a Saucepan with a Small lump of fresh Butter, stew them well till quite hot, stirring carefully to prevent burning. Season to taste with Salt & Cayenne & serve hot. Haddock, Turbot, Sole or [illegible] [illegible] best; but Salmon or Trout will do. There should be more Fish than Eggs or Rice. [Like?] Stew is not to be make too rich with Butter but to be rather dry. (Lady C.C.) Cardinal Equal parts of light & red Wines with Sugar, & Oranges or [illegible] of Orange & Slices of Peaches put in. [Illegible] Slices of Pine Apple to be served in a China Bowl.
