Pork Brawn 19 Two pigs head cleaned and rubbed will with salt and salt petre to be 3 or 4 days with the ears and tongues. Then Boiled till all the bones come out. Chop them not very small put some salt over them and put them into the tin before they are cold with the horny part of 2 oxens feets [warm?] and shut. Lay weights on them all next day then put them into this [illegible] Two English gallons of water - quarter of an English pint of oatmeal - a Quart of good wheat Brown - boil them gently one hour and drain it off - when cold add one pound of common salt - put in the Brown and keep it covered - [illegible] the [illegible] once a month.
