Boil 1/4 lb rice in milk till thick then add 2 ounces of butter a little salt, and the yolks of three eggs Pour it over the veal and bake it. Water Biscuits as at [Clare?] These Biscuits have a little butter in them, about the size of a walnut to 1/2 a lb of flour, rubbed very smooth cold milk only no water is used to make the paste which requires beating very thoroughly to make it perfectly smooth It is then to be rolled out very thin indeed. It must be thoroughly well pricked quite through for they do not rise in little blisters as they should do and baked in a quick oven taking care not to let them burn If the oven is not quick enough, the biscuits do not rise in the little blisters and if not well pricked quite through, they will rise in too large ones The paste can scarcely be beaten with sufficient strength by a woman's arm and cannot be rolled too thin
