Have ready sliced celery, carrot, & a little turnip & stew them tender in the soup. If approved a little Ketchup may be added Plum Pudding 1 lb. Beef suet not chopped fine 1/2 lb stoned raisins not chopped fine 5 oz of good flour 5 oz Brown sugar 2 Rinds of lemons grated or Seville oranges 12 good sized bitter Almonds pounded 4 Eggs leaving out 2 Whites. Mix the ingredients well till they become stiff paste tie them tight & Boil them six hours precisely. Charlotte as at Clare Butter a common pudding dish....line it with thinish slices of bread, and butter... Then spread a layer of apples over which grate lemon & sugar. Pile up alternate layers of apple & grated lemon & sugar considerably above the edge of the dish as it will sink in baking. Soak slices of bread the while in boiling milk....and lay them at the top of all things.... Then butter another dish, and cover the edifice and bake it four hours.
