To refine Beer Ale Cyder or Wine and to recover it when sour Take the shells and whites of 12 eggs 1 ounce of Salt of Tarter Half an ounce of pearl ash Half an ounce of grains of Paradise in fine powder and mix the whole with as much chalk or whiting as will make it of the consistance of paste roll it into small balls put them into the barrell and bring it down immediately This preparation will make it fine Mild and pleasant in a few days The above quantity is for a hogshead Take notice a quarter of a pound of Mustard seed pounded fine and a handfull of Faenugreek seed will prove a remedy for beer or ropey cyder A good imitation of port wine Take English grape wine (or good cyder) four gallons Fresh juice either of Elder berries or Black berries one gallon Log wood 4 ounces Rhatony root bruised half a pound Brandy two quarts Infuse the Log wood and Rhatony root in the Brandy and a gallon of the wine or cyder for one week then strain the liquor and mix it with the other ingredients Put it in a barrell Bung it well for a month and then bottle it To Sweeten stinking Barrells Take salt Petre one pound quick Lime three pounds Boiling water five gallons (This quantity is for one hoghead) Bung the barrell tight ranel it well and then let it stand on each head for some time especially on the head that is the foulest A good couloring for cyder Take a quanty of new cider and boil it untill it is reduced to one fourth of its origional quantity One pint of this will coulor a Hogghead To destroy ants Take white sugar in powder add to it a little arsenic and put on paper near their abode
