Oranges in & just give them a Scald & put them by in the Syrup till next Day; then take & boil them gently for a little while, then set them by for 3 or 4 Days; then boil them as before & put them close down in the Pot & put the Syrup over them & cover them from the Air, & when cold put a Paper wet w.th Brandy close to them tied down tight w.th a Bladder; if you have any Apple Jelly put a little on the top of them - To make Marmalade of Quinces. Take a Dozen Quinces, put them in a net in a large Quantity of Water till they are very soft, then take them up & pare them
