To preserve whole Oranges. Take the best Oranges, rub them well in white Salt; boil them in a Bag made of fine Cloth; then to steep 3 or 4 Days in fair Water; Shift it morning & Evening; the night before you preserve them pare off the Rinds as thin as you can & lay them in fresh Water till next Day; then have scalding Water & put them in & let them boil till the Water is high colour'd; then have ready another Pot of scalding Water & remove the oranges into it and continue boiling it till a Straw will run through them; then take them up & dry them
