in a coarse Cloth & then make a Hole in the Top of them & with a Bodkin pick out the Seeds; stir it as little as you can & to every Pound of oranges put a lb of Sugar & 1 1/2 Pint of Water; make a Syrup of it & clarify it with whites of Eggs; strain & put it in y.r oranges; let them boil indifferently fast; keeping them on their Sides that the Syrup may run into them till they begin to jelly; then take 2 lb of Sugar & a Pint of Water of Pippins & boil it till it jellies; then put it to y.r oranges & boil it together till the Syrup is thick; take the oranges & put them in Glasses, leave them uncovered till they
