sift it before you peel your Fruit, them peel them very thin, take out the Stones & fill them with Sugar; cover them close & let them stand twenty four Hours; then boil up the Syrup & boil them a little in it; put them in a Pot with a very close Cover & stowe them up in the Middle of a Feather Bed 24 Hours more; then boil them till they look clear & are tender; then stove them up again as before; then close them & lay them in Plates to dry; grate fine Sugar over them every Day & turn them when dry'd - Put them in the Chimney Corner for two Days.
