two Anchovies, Lemon Peel, Mace, Cloves, Mushrooms; Cockles, two yolks of Eggs, four Spoonfuls of Cream, beat together; when it is ready to take up, shake in the Cream & Eggs & let it have a boil & take care it don't curdle; slice & fry the sweet Bread to lay upon it, Lemons, Oysters, & other Pickles. A Mock Turtle. Take the Knuckle end of a Shoulder or Leg of Veal & cut the Meat off the Bone in Lumps not very small; then take Calves Feet & boil them a little, & tripe if you can get it; season all this with Salt & Cayenne Pepper; then add plenty of strong Gravy quite free
