take a Lemon & pare it; cut the Meat small but not the Rind; put in a little Lemon Juice to your Taste; let the Butter be drawn very thick before you put in the Ingredients. Cucumber Catchup. Take 2 Doz: of large Cucumbers & pare them in thick Slices; put to them one third of onions cut in Slices; strew over them a handfull of salt & break them well with your Hands; let them lay 20 Hours; then drain them from the Liquor, & to every Quart of this Liquor put a Quart of white wine, set it over the Fire wth. Plenty of whole Pepper, Mace, & quartered Nutmeg;
