To make Spanish Puffs. Take a Quart of Water & boil it till it comes to a Pint with a Stick of cinnamon in it; & then Stirring in Flour to make it a thick Paste - Sugar it to your Taste; then put it in a Marble Mortar & beat it till fine w.th 5 Eggs; three whites - then drop it in a Pan with boiling Lard - To make a Gritty Pudding. Boil the Grits about an Hour, then take them up & put to them some onions & some apples chopt, & some Raisins stoned; then boil them an Hour longer; when you serve it up Stir in a good Deal of Butter & some good Gravy if you have it.
