Rice is quite plump & tender, adding Milk occasionally if it wastes too fast; then put to it a little Sugar & stir about 3 oz: of Butter into it; beat up 3 Eggs whites & all; stir in them the remainder of your Milk; grate in it a little Nutmeg (Sugar if you like it) then mix all together, & put it in your Baking Dish.
