To make Orange Wine. To a Gallon of Water put 3 lb of Sugar; boil & scum it near an Hour; before it is quite cold put in some Ale Yeast; to 20 Gallons of Water take the Rinds & Juice of 80 Oranges, put your Rind to steep in two Quarts of the best Brandy for two Days; then take out the Rinds & put them in a Linnen Bag with a Stone to keep it down; mix your Juice & Brandy with your Syrup & put it in the Vessel - In half a Year bottle it.
