To fine Wine the Lisbon Way. To 20 Gallons of Wine take the Whites of 10 Eggs & a small Hand full of Salt; beat it up to a Froth with a Quart or More of the Wine & put it into the Barrel & it will be fine in a few Days. To make Currant Wine. Take Currants full ripe & mash them with your Hand, & to every Gallon of Fruit put a Gallon of Water that has boil'd & gone cold again; mix them well together in a Vessel & next Day run it
