through a Hair Sieve & to every Gallon of Liquor put 2 lb of Sugar; put the Sugar in the Barrel & put the Liquor to it, stirring it 'till it is dissolved; then Stop it close & sometimes give it a little Air whilst it is working; you may bottle it in three Months or let it stand 'till March - when you bottle it put a Lump of Sugar in each Bottle. Another. Pick red Currants & some few white ones clear from the Stalks when they are full ripe & bruise them, each Quart with a Quart of Spring Water, & to all 2 Gallons
