Baking Powder Take equal quantities of rice flour, carbonate of soda & tartaric acid. Mix well & pass two or three times through a colander. For pastry use a teaspoonful to a pound of flour. 6 teaspoonfuls are one ounce of rice flour. Rock Cakes 1 lb flour 1/4 lb lard or drippings 1/4 lb brown sugar (4 tablespoonfuls) 1/4 lb currants 2 oz candied peel 2 teaspoonfuls baking powder. Half teaspoonful ground ginger or nutmeg & a little milk.
