Beef Stroganoff 2 1/2 lbs lean chuck (cut in finger lengths) Dust with flour and brown meat Put in a big hot casserole Add 1 1/4 cups diced onions 3/4 cup sliced mushrooms 3/4 cup tomato juice 1/2 cup dry sherry 2 cups beef stock (cubes) pinch of oregano salt and pepper Cook covered at 250 degrees to 300 degrees till done - 2 hrs Add sour cream - Serve on toast or rice
