Pickled Citron - Mrs. Hasbrook 13 lbs citron cut in 1" chunks 1 lbs sugar 1 oz whole cloves 2 ozs cinnamon sticks 2 qts vinegar Peel and cut citron. Boil until tender. Pour off water. Combine other ingredients and bring to a boil. Add citron boil 10 to 15 mins. Bottle Chow-Chow - Amy Shafto 1 large or 2 small citron Cut in squares - cook until tender 1/2 as much gr. tomatoes as citron after it is cut up 2 bunches celery 5 red peppers 2 ozs mustard 1 tsp ground cloves 1 tsp tumeric 2 lbs sugar 4 cups 4 tbs. salt Almost 1 qt cider vinegar Cook 20-25 mins. Makes about 8 qts.
