125 8 oz icing sugar 3 oz chocolate 2 oz almonds 2 egg whites vanilla essence grated or powdered chocolate with slightly beaten white of one egg. Add sugar, vanilla essence and a sufficient of second egg white to form into smooth paste. Place in a pan, beat until lukewarm. Have ready bag and pipe. Force mixture on greased tin in nice shapes. Leave for 3 or 4 hours, then bake in cool oven for 1/2 hour until crisp. Kidney Croquettes. 1 sheep's kidney 1 poatatoe 1/2 small onion } for each person margarine Boil potatoes, wash with margarine + milk, season. Chop onion. Peel kidneys, remove white core + chop them. Add kidney + onion to potatoe
